Meet the Creator: Amie Valpone, The Healthy Apple

Cookbook writer Amie Valpone, is the creator of, as well as a culinary nutritionist, chef, cookbook author, recipe developer, writer, motivational speaker, and a detox expert. The inspiration for her blog and cookbook, Eating Clean: A 21 Day Plan to Detox, Fight Inflammation, and Reset Your Body, came from her journey healing herself from various chronic conditions ranging from hypothyroidism, leaky gut, and mold toxicity.

Impressive, Right? We thought so. That’s why we wanted to share her inspiring story with you.

By the age of 23, Amie had major toxins in her body due to lacking a specific gene called, MTHFR, which helps vital organs eliminate toxins in the body. Without being able to eliminate these genes with natural body processes, Amie’s body began developing chronic illnesses. After suffering from these conditions and heavy metal accumulation in her body, Aime set out to heal herself.

She began using food to “detox” (not a juice cleanse, she points out) her body to eliminate the toxins. Her personal quest to regain her own health inspired her cookbook Eating Clean: A 21 Day Plan to Detox, Fight Inflammation, and Reset Your Body. We caught up with Amie and she shared with us, the inside scoop about her cookbook.

Interview with Amie Valpone, Author of Eating Clean

Anna Curran: Tell us, what make your cookbook different than others on the shelf?

Amie Valpone: I want to show people that eating clean and living clean feels amazing. Not because they should do it, but because once they see life this way, they’ll never go back.

There’s not a processed bag of chips I’d eat to give up for how incredible I feel right now. Food saved me. I learned how to get my body working for me-not against me. Instead of treating symptoms, I learned how to address the underlying imbalances in my body.

I was on a cocktail of drugs in my 20’s and I wanted a quick fix–a magic pill–but that wasn’t possible.

Soon, I realized I wasn’t the only one suffering and that’s when I went back to school-learned how to heal my body, started my blog and wrote my book. This isn’t just a cookbook; it’s a handbook on how to detox your life including your cleaning supplies, beauty products, personal care products and food. It’s everything I learned in my journey to wellness from illness. It’s how I healed.

Anna Curran: What’s the coolest thing that happened while you were making your new book?

Amie Valpone: I gained confidence in my kitchen and learned that I can create anything and do anything that I put my mind to. I grew so much from writing this book. It came from my heart, and I wanted every page to be in my voice with my words and my creativity and that’s exactly how it is!

Anna Curran: Why did you want to write your cookbook?

Amie Valpone: I wrote this book because I don’t want anyone to go through what I went through the last 10 years trying to figure out how to be healthy in a real way. I’m ready to hand over the keys. I want to help others save time, money and suffering.

The fact is that nothing changed with my health until I changed my environment and my lifestyle. We have so much more control over our health than we realize. I had to learn how to eat and now I want to help others realize how much food they CAN eat.

This book is rich and delicious, not restrictive. Detox is not what you think. All of these recipes in this book are detox-approved without any inflammatory ingredients. The fact is that you could have any health crisis and suffer for years but if more people understood what an important role they play in their own health, they could change the quality of their life forever. Every little change in this book is powerful when done together.
