Norwegian Crunch


The holidays are a great time to let yourself indulge in all of those rich foods and sweets you probably wouldn’t normally eat with frequency.  Norwegian Crunch is one of my favorite holiday indulgences and a special treat I have enjoyed since my mom scribbled down the recipe from a friend years and years ago.  Now, I am in charge of making this delicious toffee-like bar.  It’s an easy recipe that yields an abundance of this decadent dessert.  Norwegian Crunch is also the perfect treat to wrap up in a box or tin and give out as a gift to loved ones during this time of year.

This is also a recipe that is easy to tweak.  Feel free to use dark or milk chocolate, and I am sure other types of nuts would taste great sprinkled atop this bar.  Also, try sprinkling a little sea salt on top.  So delicious and unexpected!


Norwegian Crunch


2 sticks butter, melted
1 egg yolk
1 cup dark brown sugar
1 cup self-rising flour
1 tsp vanilla extract
6 (1.55-ounce) chocolate bars
1/2 cup to 3/4 cup chopped pecans


Preheat oven to 325°F and butter a jellyroll pan. Whisk together butter, egg, sugar, flour and vanilla extract. Mixture should combine to a smooth, almost caramel-like consistency.  Spread out onto prepared pan. Place in oven to bake for 25 minutes. Remove from oven and immediately arrange chocolate bars in an even layer on top of baked mixture. Let sit for 5 minutes and then evenly spread out chocolate using a spatula. Sprinkle with pecans and lightly press into chocolate.
Let cool and then cut into bars and refrigerate. This bar tastes EXCELLENT broken up into smaller pieces and sprinkled over ice cream!
